Rose blossoms and bright red fruit aromas, also white spices and rose petals. The palate is bright and fresh, deceptively savoury and full of red fruit notes, with a clean, refreshing finish. A lovely balanced wine.

  Whole berry pressed in pneumatic air press (with chilling) and then to tank for cold settling. Cold settled for three weeks prior to racking off gross lees. Wild yeast fermented with 200gms/ tonne equivalent hydrated bentonite clay until sugar dry (less than 2gms/ litre RS). Cold settled again and racked off ferment lees. Addition of 50ppm Cream of Tartar in powder dusted over the surface to precipitate tartrates and cold stabilise the wine. Racked again and sent to bottle. 60ppm SO2 added for security.
